What is it? 

This easy lemon rice recipe is one of the most common South Indian meal served with appalam/papad and pickle is easy to make with few ingredients. The making of this takes very less time around 15 mins yet it is delightful. It is one of the dishes that comes in thali varieties in restaurants. This is one of my favorite travel food due to cooking time and doesn’t spoil. It can be consumed even after few days with same taste of what it has been prepared on the first day. Unlike few other vegetables/fruits, lemon is not a seasonal fruit and can be easily store bought around the year and all over the whole. I wouldn’t much worry about the food while traveling long as it is easy to get the fruit. The spices, lentils and nuts used here are right in their nutritional properties. This recipe can be made by anyone who doesn’t know about cooking or for quick cooking and can be refrigerated for few days if needed.

As a Lemon…

As lemon is a good source of Vitamin C, boosting immune system, works well for weight loss plan with honey, promotes hydration and other benefits, it is also considered as one of the product ingredient for skin care. It promotes good digestion as its a soluble fiber. It’s a great addition for many dishes acts as an infuser here in this recipe, it produces nice smell, colorful for decoration platters, gives a wonderful tangy taste to lot of dishes and drinks. It is also best for hangover drinks. Though it gives a lot of health benefits, it is cheaper to buy & is perfect for summer drinks (lemon juice) and for parties.

The Taste? 

Sour

As this fruit has citric acid, majorly the taste is sour. Though it is defined as sour, this easy lemon rice recipe is a blend of extracted lemon juice along with other lentils and nuts makes taste your tongue buds mild sour. The key part while making is not to add too much of lemon juice as it will spoil the dish and will make it too sour. The proportion is important and sometimes the acidic property of lemon varies. The peanuts and cashew nuts makes a great addition to this rice as the crunchiness of these nuts blends to the taste.

The benefits of eating lemon rice has two things majorly, as listed above on lemon properties along with rice which is considered to produce cooling effect. Rice is most consumed in tropical and hot countries and in South India, rice is a key cereal grain for farmers while working under hot sun. There are different varieties of rice such as basmati, brown rice, idli rice, sticky rice. The rice I used here is a boiled rice specifically sona masoori. If you don’t have this, try with basmati rice which is naturally very aromatic or any other rice as a substitute. Rice naturally contains lots of carbs which is essential for generating energy. As I was always told that there should be an equal amount of physical work performed while intaking carbs.

Papad, Tamarind rice, Yogurt rice, Pickle, Masala Vada, Chips, Dry veggies, Potato Fry

It is considered as a full meal or with other combinations of rice varieties, it is great for lunch. It is best suited for thali varieties. If you have eaten it, I would highly suggest cook at home or Indian vegetarian restaurants may carry it. Even if there are no combinations, just fritters or pickle will greatly give a supporting taste. I wouldn’t recommend eating lemon rice with any of the vegetarian curry dishes as meat taste can elevate largely which can suppress the taste of lemon rice but like grilling meats like lamb seekh kebab can go well. The are lot of variations in lemon rice made in India as well other cuisines. Though the dish here looks yellowish does not come from lemon, the color of turmeric that brings out.

Thali nothing but a meal has both vegetarian and non-vegetarian. When you go with vegetarian thali, it is served with papad, rice, sambar, rasam, dessert, rice varieties such as yogurt, tamarind, lentil with vegetables (kootu), dry vegetables, etc. In India most of the states has their own style of thali ranging from different vegetables that are locally produce, number of dishes served along with starter drinks. It is a complete lunch meal one should try it. There is also called mini-thali where the number of dishes lesser than main one and lemon rice is one that features.

Why not lime rice? Well lime is more acidic than lemon and proportion of the extracted juice has to be carefully added to the rice in order to avoid too much of sour taste. Naturally lime is more bitter in taste when compared to lemon and sweet is more than in lime. Adding too much of lime can also bring bitter taste. There is a definite difference between lime and lemon. Limes are small, green, round in shape versus lemons are large, yellow, elliptical in shape. Both of the juice extracts can be used for varieties of cooking purpose and I heavy use it for marination of meat, vegetables, grilling, biriyani, garnishing as well as lemon/lime juice. There are few dishes where both lemon and yogurt goes side by side and care should be taken in proportions of what serving is needed to balance the taste.

Easy Lemon Rice Recipe

The Cooking Process

Fry the cashew nuts to golden brown and roast the peanuts for a minute. Make sure not to burn it. Grate the ginger and add the lentils, ginger and spices to medium hot pan and temper it. Make sure rice is cooked before doing all these process so it will be ready for you. Make sure to add salt at right proportion or as needed but in small batches so as to avoid any salty taste. Add the cashew nuts and peanuts along with coriander for garnishing.

Heat 2 tbsp of oil in a pan and roast 2 tbsp of peanuts for a minute.

Also add 2 tbsp of cashews to it and fry until it turns golden brown.

Keep the roasted peanuts and cashews aside.

Now add mustard seeds, urad dhal, chana dal,chopped green chilies, curry leaves, hing powder(asafoetida), grated ginger to it. Let it splutter the tempering on medium flame and turns light brown.

Now add ¼ tsp of turmeric powder and saute slightly.

Further, add 2 cups of cooked rice and salt to it.

Mix well to ensure everything is combined well.

Also add the chopped coriander leaves and 2 tbsp of lemon juice. Mix well.

Now add the fried peanuts and cashew nuts to it and combine well.
