What is it?

A simple quick chicken recipe (Salty Pepper Chicken) is perfect for anyone who doesn’t have time to cook or in hungry or to add an extra dish to your other dishes. This recipe was an accidental as we rushed home for dinner and had nothing to eat. Glad we had chicken on that day but looked at each other cooking chicken will take time. Thank to my mom who picked very few ingredients along with chicken and was done in 15 mins. Never wondered the recipe would turn to a such delightful one. But wait I have experienced several times while hungry eating anything for hungerness makes it tasty and delightful even if it is not. Have you ever experienced like me? So I asked my mom to redo the same dish with same amount of ingredient and it tasted so good. I’m so happy to share this dish to try my accidental and an unusual dish.

Chicken, muscle builder’s default protein food and everyone’s love for chicken I hope this recipe can taste you different. I have a personal opinion that chicken doesn’t have its own taste like other meats, seafoods but definitely its a great supporting ingredient with other spices, vegetables that it can really turn good according to its properties. Adding chicken to your meal plan is always good and taking right proportion will help support your health. Consuming 4 – 6 oz of chicken is an average to consider.

When you consider making this recipe it is not only just the proteins you take from chicken but other precious ingredients such as turmeric (curcumin), garlic, curry leaves and peppers. A tip to consider is I clean chicken with turmeric powder, the reason being it is anti-bacterial and removes the odor of the meat.

Do not confuse with traditional pepper chicken as the ingredients for this are more than I have used here and taste changes a lot. The pepper chicken tastes with spiciness where salty pepper chicken will have more salty taste.

The Taste?

I would definitely call Salt is the hero of this dish. What Salt??, will bring you a question? Yes most of us would agree when there is no salt added to most of the dishes, it wouldn’t taste good. But the reason calling salt as hero is the outcome of this Salty Pepper Chicken is little bit salty elevated while eating. Every chicken piece you eat should feel it salty. Taste can be bit different when made with packed frozen or broiler chicken. I generally use red hen, rooster which are considered as country chicken tastes so good compared to store bought. Make sure to cook well when using the other breeds of chicken as they are tough in nature to cook. I feel it as the real taste of chicken.

The other way of elevating the taste is to use bone-in chicken. The reason for this is the bone looses it juices and infusing this with the spices makes it so good. Personal opinion is not to cook with white meat or breast pieces as the real taste of chicken juice will be missed. Next comes the pepper spicy, if you are a person not used to consume more spicy add less of it and use finely coarse black pepper corns. But if you are the other side of a person like me love spiciness, do not fine coarse the pepper corns. There are lot of health benefits with pepper more than other spicy ingredients such as green, red chillies.

This is a perfect dish for chicken fried rice as non-spicy rice can balance very well with salty spicy chicken. There are several such dishes like chicken curry, mutton curry with white rice, jeera rice and coconut rice, chapati, naan etc can be used. This spicy pepper chicken can be taken for lunch or dinner. If you would like to make some thick curry out of this, add more onions to bring that consistency.

Adding Salt…

The key factor is adding salt to this recipe. Salt is one ingredient that will highly differ in usage from person to person, family to family. While cooking make sure to add salt what is required for your taste and now add little extra to elevate the taste. If you are not sure how much to add, add few pinches and taste it to feel it little salty and make adjustments accordingly.

The Cooking Process

Just heat the oil and while its hot add curry leaves and mustard seeds and give a quick stir. Make sure not to burn it. Followed by onions and garlic and saute till it looses water. Add the small cut chicken which are washed with turmeric. As this is a dry dish, wait until water is oozed out of chicken and its the time for adding black pepper corns. I hope this dish will be helpful in situations where something has to be cooked quickly with simple ingredients yet tasty and healthy. Just looking at every ingredient here, it is commonly stocked up in the store.

Heat oil in a pan, add mustard seeds and curry leaves to it. Let it crackle.


Then add the chopped onions and garlic to it. Fry until it turns golden.


Now add the washed, cleaned and chopped chicken to it.


Let it cook for sometime and then add ½ tsp of turmeric powder and salt to it.


Mix well to combine turmeric powder and chicken with one another.


Let it simmer for 5 minutes (chicken sheds lots of water. Ensure to squeeze out the chicken well after washing it. The chicken needs to completely become dry).


Now add the ground black pepper powder to it and combine well to coat the masala.


When it turns dry and aromatic. Switch off the stove and garnish with fresh curry leaves.
