What is it?
This simple Tomato Rice recipe made out of tomatoes and spices along with chili powder with the outcome of flavor and mild spiciness. This is quick go main dish which can be cooked under 30mins. It is one of the dishes comes under variety rice platter such as lemon rice, yogurt rice, puliyodharai/tamarind rice and list goes on. It can be made using Instant Pot or regular pressure cooker whatever the equipment but outcome will be the same. To start with wash and soak the rice, followed by spices. Do not burn the spices as it will tend to spoil the whole dish by its burnt flavor. When you smell nice aroma, add onions followed by ginger garlic paste. It is important to note there shouldn’t be a raw smell of ginger garlic as it won’t blend well.

The spice flavored with tangy and spiciness of tomato rice
There are different variations of tomato rice made across the country though taste highly differs made at each home’s kitchen. Taste can also vary by how fresh the spices are and readiness of tomatoes means is it ripen or yet to be there. It’s always not easy to find good ready to make tomato. The good indicator of ripen tomato is just by looking at the color of it, usually deep red and the texture which is tender and shinny. As cooking method and ingredients varies by region, you may not find it direct to say this is the unique taste from this simple tomato rice recipe. What I have done here is pretty straightforward of cooking rice and mixing it with sautéed spices and tomatoes to give a nice flavored with the little bit of tanginess.

Yogurt/Raita, Pickle, Fryums, Variety Rice
Tomato rice can be perfect with yogurt, pickle of your choice and is one of the best compliments for variety rice. Although its one’s preference of what and how many varieties they make, I have seen tomato rice presence atmost. When finishing up this tomato rice, refresh yourself with buttermilk or mint juice. I have seen different variations of tomato rice in mexican’s classic mexican tomato rice, tomato fried rice, basil tomato rice, tomato brown rice pilaf from mediterranean, arroz de tomate from Portuguese.

Firstly, rinse and wash rice thoroughly and soak it for 10 minutes. |

Using Instant Pot cook the rice with 2 cups of water, salt and a tsp of oil in rice mode for up to 12 minutes and unplug it. |

Heat a tbsp of oil in a pan, add mustard seeds, urad dal / black gram, cumin seeds, fennel seeds, cinnamon stick, star anise, cardamom, clove, curry leaves. Let it splutter. |

Add the chopped onions, green chilli to it and saute until it turns soft and translucent followed by ginger garlic paste to it. Fry for 2 minutes until it turns golden brown. |

Now add the chopped tomatoes to it. Cook and cover until it turns soft and mushy. |

Additionally add turmeric powder, red chilli powder, kashmiri red chilli powder, coriander powder, garam masala powder to it. |

Saute and cook for a few minutes to make a tomato mixture followed by chopped coriander leaves and mix well |

Furthermore add the prepared tomato mixture to cooked rice. Mix gently to combine well. |

Serve tomato rice with raita and also it goes well with boiled egg, potato fry, varieties of vegetable side dishes etc. |
